Oh, it's so good and if your melon isn't beautifully sweet and ripe, or even if it is and you like things sweet, make a simple syrup and steep

the mint in it.  Then chill it and pour just a little of this over the melon!  MMMmmmmmm.

this has been a favorite in my family for over 50 years!

OATMEAL CAKE

 

1 ¼ cup boiling water                                                             2 eggs

1 cup quick cooking oatmeal                                                  1 tsp cinnamon

½ cup shortening                                                                    1 tsp nutmeg

1 cup white sugar                                                                   ½ tsp salt

1 cup brown sugar                                                                  1 tsp vanilla

                                                                                                1 ¾ cup sifted cake flour

                                                                                                1 tsp baking soda

 

Pour boiling water over oatmeal and let stand 20 min. (2 cups of left-over cooked oatmeal may be used). Cream shortening and sugar. Add eggs and beat well. Blend in the oatmeal. Sift the dry ingredients mix in. bake in a greased 13x9 cake pan in a 350 oven for 30 – 35 minutes. Whle cake is hot frost with broiler frosting.

 

BROILER FROSTING

 

6 T melted butter                                                                    1 cup coconut

2/3 cup brown sugar                                                               ¼ cream

½ cup chopped nuts                                                                1 tsp vanilla

 

Combine all ingredients. Spread on hot cake. Place under broiler for about 2 minutes or until bubbly and brown. ½ cup finely chopped dates may be added to batter for a tasty variation. (I like the coconut toasted quite brown as it gives it a bit of a crunch)

Broiler frosting...now there's a new cooking term for me. That cake sounds delicious!

My mom used to make it when I was a kid and I made it for my kids, not as often as I should have, but it has always been the most requested cake in our family all these years and the best part is that it's so easy to make!

One of our favorite summer treats is Well we do not have a name for it we just call it that fruit thing. Take fruit of your choice (our favorite is apple ) peeled and cut into small pieces into a small bowl add sliced banana some nuts ( we use walnuts) a dollop of sour cream some chocolate chips( the kids like peanut butter chips) mix, then sprinkle with a little brown sugar. it is good with strawberries or blueberries also. Yum!

One of my favorite summer recipes is Babe Ruth Bars.

1 1/2 cups light Karo Syrup

1 cup brown sugar

1 cup peanutbutter

1 cup (12 oz. bag) peanuts

8 cups corn flakes

2 packages Milk Chocolate Chips

6 Tablespoons Peanutbetter

Bring syrup and sugars to a boil, for one minute.  Remove from heat and add 1 cup peanutbutter.  Let cool.

In large bowl add peanuts and corn flakes, add syrup mixture.  Mix well.

Butter a cookie sheet and place the mixture onto the cookie sheet.  Butter hands and spread mixture evenly on cookie sheet.

Melt the milk chocolate chips and 6 tablespoons peanutbutter in a double boiler.  Spread over corn flake mixture and chill.

Being the wife of a man who does nothing small, I find myself always looking for new and interesting recipes to use the bounty of our garden in.  I don't know about any of you, but for some reason, zucchini will produce better than anything else in our garden and by fall, I am sick of zucchini.  Zucchini pickles, fried zucchini, zucchini bread, zucchini cake, zucchini, zucchini, zucchini!  UGH!  The neighbors almost hide everytime they see us approaching with zucchini.  But this year, I found a new use for zucchini, it is called Zucchini Jam.  And boy is it good and it gets rid of all those zucchinis that you are tired of (and it is easy to make too!)

 

6 cups zucchini, peeled and grated

6 cups sugar

2 Tablespoons Lemon Juice

1 large can crushed pineapple, drained

2 small packages of apricot jello (or any flavor that you like)

 

Add one cup of water to the grated zucchini.  Cook for 6 minutes.  Add sugar, pineapple, and lemon juice.  Cook for 6 minutes more.  Add jello, and cook 6 minutes more.  Seal in jelly jars or pint jars.  This recipe will make 4 pints and 1 jelly jar.

 

This is wonderful on ham or pork.  It is great on top of ice cream.  It delicious on toast or pancakes.  It is just plain good on anything you would (or would not) put jam on.  And just think, kids will eat it and they are getting their vegies!  Hope you enjoy.

Cool & Easy Punch

Make an ice cube tray of 7-UP ice cubes to be put in punch, to prevent diluting

1 - 46 oz. pinepple juice

1 - 12 oz  frozen orange juice

1- 6 oz can frozen lemonade

8 C. water

Mix all together . Can be made ahead of time

At time of serving add 1 -liter of 7-UP & 7-UP ice cubes

For a real treat - add sherbert per taste & any flavor

Very Easy Strawberry Pie

Purchase a pre-made graham cracker pie crust

Use fresh strawberries approx. one quart.

Wash berries, remove tops, cut in fourths or bite sized pieces.

Arrange in crust until they are aprox. 1 - 2 inches above the side of the crust.

Make a strawberry glaze with 3/4 cup sugar, 1 cup water 1/3 to 1/2 package of strawberry jello (I make 2 - 3 pies at once) and 2 1/2 tablespoons of corn starch.  Wisk the corn startch into the mixture to avoid lumps.

Cook mixture on top of stove to a rolling boil, stirring constantly.

Pour over berries in the crust making sure all are covered.

chill until set.

Serve with whipped topping or ice cream and enjoy!

O ne of my favorite recipes for the summertime is a Fresh Blueberry Cheesecake

crust:

2C. graham wafer crumbs

1/2 C. sugar

1/2 C. melted butter.

press into a 8 x13 pan and microwave on high for 1 minute.

In a bowl, mix 2packagesof softened cream cheese with 1/2 C icing sugar and 2 packages of dream whip prepared.  mix well and spread over the crust.  Cover the mixture with fresh blueberries.

crush 1 C of blueberries

add 1 C sugar

2 TBSP corn starch

Cook over medium heat until thickened.  Cool spread over blueberries and chill until ready to serve at least 2 hours.

OK, so you said Appetizer & Desert, correct?  I looked through all the recipes you received and you looked a little short in the appetizer department, so I pulled out my old church cookbook from when I was growing up.  This is the cookbook that I go to for everything and I was looking for a particular desert recipe, but happened upon something else instead.  These are my most favorite summer thing to eat, they are just an automatic reminder of summer, and they bring back so many good memories of my childhood.

REFRIGERATOR PICKLES

 

8 c. sliced cucumbers 

1 green pepper (diced)                    

1 c. onions, diced fine                       

1 1/2 Tbsp. salt

2 c. sugar

1 c. vinegar

1 tsp. celery seed

 

Mix together first 4 ingredients.  Let stand 1/2 hour and rinse with cold water twice until salt is rinsed out well. Mix together sugar, vinegar and celery seed, mix into cucumbers until sugar is dissolved.  Keep in refrigerator - mix once more later.  Keep in refrigerator and eat as is ---- keeps indefinitely.    It really does say this in the book, but I'm not one on keeping things indefinitely in the refrigerator, besides, they never last that long anyway!!!  LOL

 

Now, I'm not sure that you consider these appetizers, but I do, if you don't, that's ok, and like my dad used to say - give me an E for Effort!
