Thank you so much for the appetizers...we definitely got a lot of desserts this evening! And I was actually planning on making a cucumber onion salad for my DH tonight...now I have the perfect recipe!
Loretta...do you know I use that same exact recipe and thought about posting it? Besides Zucchini, it seems like I always have an overabundance of cucembers and by the time I make my relishes, my dill pickles in all "heats" to suit everyone, and of course my crisp sweet pickles, I still have more cucumbers than I can use. But I always keep a bucket of these in the 'fridge and replenish it after every meal with more cucumbers and onions until we run out.

Well, I guess I didn't read the instructions very well. LOL. I guess you can call my recipe an appetizer, especially if you serve it with cheese and crackers, and i guess it could also fall under desserts since it is really good on top of ice cream. I was just looking for something different to post here and I love the unusual recipes I find in my old cook books, and this one is definitely unusual.

Orange Jello Fluff
24 oz carton Low Fat Cottage Cheese
16 oz carton Cool Whip
20 oz crushed pineapple drained
large box sugar free orange Jell-o
Let Cool Whip soften slightly, add cottage cheese, drained crushed pineapple, orange Jell-o (just the powder. Mix all ingredients thoroughly. Can be used as a jell-o salad, or as a dessert. Refrigerate, will keep at least a couple of weeks, if it lasts that long.

OK, so it's not exactly an appetizer...but it is a great recipe. A new zucchini recipe is a great thing to find.
A few years ago I developed severe debilitating rheumatoid arthritis. It's really made a difference in my ability to do anything! One thing I've learned though is that you can enjoy simple foods just as well as more elaborate ones. One just needs to do a little more planning. In the summer I like to eat cool and easy foods. One I've done is to just hard boil some eggs. Peel them and place them in a jar of pickled beets. After a few hours they have a nice color and can be used. Place them as is on a relish tray, Slice them and serve them with cheese and crackers, or make deviled eggs. You are only limited my your imagination.
Use it as part of a relish tray and serve shish kebobs for your entree. Easy if you use sirloin steak or roast, peppers, onions and mushrooms. Pick ice cream as dessert and you have easy, cool summer meal!

On the Broiler Frosting, what is the "1/4 cream?" The cake and frosting look good and I think I'll try it.
We've made the Orange Jello Fluff (we didn't have that good name for it) for years and everyone LOVES it. A really easy and refreshing treat in summer. You can also use mandarin oranges or you can change jello flavors. And for variety you can use both pineapple and mandrain oranges with the orange jello. Strawberry jello is also good with the pineapple. But my favorite is the orange jello. I don't use sugar free jello, but it's a good option.

Linda - sorry it took me so long to get back with you on this. It should read 1/4 C Half & Half but you could use real cream if you like. Enjoy

Hi Jafralind, saw you were needing a copy of the Oatmeal Cake recipe. If you didn't get the recipe e-mailed to you, I had saved it and was waiting to find out the answer to the "cream" question. I'm posting it now in case you still want it. Hope this helps.
OATMEAL CAKE
1 ¼ cup boiling water 2 eggs
1 cup quick cooking oatmeal 1 tsp cinnamon
½ cup shortening 1 tsp nutmeg
1 cup white sugar ½ tsp salt
1 cup brown sugar 1 tsp vanilla
1 ¾ cup sifted cake flour
1 tsp baking soda
Pour boiling water over oatmeal and let stand 20 min. (2 cups of left-over cooked oatmeal may be used). Cream shortening and sugar. Add eggs and beat well. Blend in the oatmeal. Sift the dry ingredients mix in. bake in a greased 13x9 cake pan in a 350 oven for 30 – 35 minutes. While cake is hot frost with broiler frosting.
BROILER FROSTING
6 T melted butter 1 cup coconut
2/3 cup brown sugar ¼ cup half & half (or real cream)
½ cup chopped nuts 1 tsp vanilla
Combine all ingredients. Spread on hot cake. Place under broiler for about 2 minutes or until bubbly and brown.
½ cup finely chopped dates may be added to batter for a tasty variation.
(I like the coconut toasted quite brown as it gives it a bit of a crunch)
