Pressing seams

In videos that I've seen, the quilter presses a seam before opening up the two pieces of fabric, then presses again afterwards. What's the reason for pressing the first time? I don't see any difference from when it's only pressed after opening up the fabric pieces.

From my understanding the first pressing is to set the seam so it won't pull apart with stress and press flat with little bulk.
