I am a new quilter and wonder how much fabric to buy when I am just buying something because it is nice but have no current project in mind for it. As a knitter I know how much yarn to buy for certain projects, but how much fabric do you get for 'stash'? Is a fat quarter enough? Half a yard?

Definitely never too much. As long as I'm still finding that I don't have the perfect fabric in my stash for any current project then I must not have enough stash!
My S.T.A.B.L.E = Stash Treasures Acquisitions Beyond Life Expectancy keeps me stable. When it wouldn't all fit in the closet I took over the guest bedroom. Its non-fattening, and it keeps me happy. Beware anyone who tries to keep me away from my stash. With it I'm stable, without it, grhh.

Hello and welcome. Unlike most quilters I know, I rarely buy yardage unless it's for borders, binding and backing. The majority of the quilts that I make use pre-cuts (i.e., charm packs, layer cakes, jelly rolls, etc.) As far as I'm concerned, the best online selection of pre=cuts is at Missour Star Quilt Co. and Connecting Threads. The prices are reasonable, quick and cheap shipping and Missouri Star has a Daily Deal sale item every day.

When I go on "Shop Hops" I usually have a list of fabric I need to finish a project. However, if there is something I like that is on sale, I buy what is needed for this project AND 3-4 extra yards. If there is just a little left on the bolt, I will buy it. Some shops give extra discounts on end of bolt.
