I lost the recipe. Does anyone have it?
I do, but it's at home and I'm at work at the moment. If no one else comes through by the time I get back home, I'll send it your way.
1. In a heavy medium pan bring broth and water to a boil. Add the barley. When boiling resumes reduce the heat to low and cover the pan. Cook the barley for 40 to 45 minutes or until barley is tender. Check after about 30 minutes and add more water if needed.
2. While the barley cooks whisk together all the dressing ingredients in a large bowl.
3. When the barley is done remove the garlic from the dressing and add the barley to the dressing while the barley is still hot. Toss the ingredients until the barley is well coated. Cover the mixture and refrigerate 1 hour or longer.
4. Before serving add the vegetables and herbs. Toss well.
