I have a rolodex (the kind that rolls) that I would like to use as an inventory of what my stitches look like when they're stitched out. I do intend to use quilting fabric. Which interfacing(s) or stabilizer(s) would you recommend that would make the fabric stiff enough to use on the rolodex but still relatively easy to stitch through?

I personally would use muslin with colored thread to show off stitches, and glue swatch onto each Rolodex card.
