Are there any of you who live alone? Do you plan menus like this? I find it very hard to do especially with a very restricted diet. I do eat a lot of fruit and steamed/fresh veggies, but I also have a lot of protein/yogurt/fruit drinks too.
Would like to hear what other singles, especially with dietary needs, do.

Nana, don't think I would sleep with you tonight not after the Kielbasa and cabbage combo! But, it sure sounds good. I have an awesome recipe for cabbage and apples. It is sooo good.

I hear you about the ingredients in most cookbooks being expensive, if you can even find them in your area. I got frustrated with trying to cook meals from healthy cookbooks that called for stuff I had never heard of (probably because chefs write most of the recipes), so I started creating my own healthy recipes from common inexpensive ingredients (and a few recipes with things available at any health food store). I would be glad to start sharing some of these with if anyone is interested.

Sukochi, here is a recipe I made recently that DH really liked. Its a bit spicy, but regular diced tomatoes can be used instead of the tomatoes with chiles to cool it off a bit.
Chicken Fajita Soup
2 large (or 3 small) boneless, skinless chicken breast fillets, cut into small cubes
1 tbsp olive oil
1 medium onion, diced
1 large bell pepper, diced
2 cups frozen corn kernels
1 can diced tomatoes with chilies
2 cups precooked black beans (or use canned)
2 cups low sodium chicken broth
1 tsp garlic powder
2 tsp chili and lime seasoning (or chili powder)
Salt and pepper to taste
In a stock pot over medium-high heat, add olive oil, onions, bell peppers, and corn. Cook until tender. Add chicken pieces and continue cooking until chicken is cooked through. Add the rest of the ingredients, bring to a boil, then reduce heat and simmer for about 10 minutes.
Note: You can also use chicken bouillon powder instead of broth for a thicker dish that can be served over rice. Just add enough water to make the thickness you prefer.

I have made this soup. It is a real winner in our house,. I serve it with tortilla chips instead of crackers and a little cheese sprinkled on the top. Of course you can always use the lowfat cheese. It helps with your dairy intake to put a little cheese. Alot of times it is more than we will eat in one setting so I freeze half and then just have to microwave when we are ready for more soup.

Thanks Nana, this is a good recipe. I threw it together on the fly the other day, but it is very similar to all the other ones posted online by the same name.
If anyone is interested, I have posted several recipes that I use on my blog. They are generally as healthy as I could figure out to make them without sacrificing taste. My DH likes them all if that is any indication how good they are.

Change in the menu for Saturday. Such a nice warm day,w e will grill hot dogs out, have some devlied eggs and pasta salad. So tomorrow nite, Tilapia. YUM!

We have dropped to 30 degrees in Michigan so I made Chili yesterday and were on leftovers today.
Fast Food or pizza tonight.
Ah...right now..looks like spaghetti with Italian sausage. Gee, wish I had some mushrooms and onions. Oh, well, we'll survive.
Tomorrow night, Baked chicken, green beans and baked fries.
