Help, I think my son hrew away my recipe for the awesome cinnamon rolls that was published a few months ago, well, maybe even a year ago. I think maybe it was Nana's recipe. I wanted to make some today and couldn't. I am in a cooking mode, just made some home made spaghetti and meatballs. I'll cook up the spaghetti noodles tomorrow. So I am all ready for tomorrows dinner. Now what to have tonight. LOL Ginny
Speaking of cinnamon rolls I've made 2 batches in the past week. From our food co-op we got pizza dough. I have over a dozen packages in the freezer. I let one rise, rolled it out, covered in melted butter, cinnamon, brown and white sugar(both splenda) and pecan pieces, rolled up into tube, cut in 1-1/2" pieces, layed on big cookie sheet, let rise again. Baked at 400 for 10 min, turned out on sheet of foil. YUMMY YUMMY YUMMY
Burned roof of mouth eating 1st one, so yummy.. took half to my friends and they didn't last at all. In fact shall go get me one now. Always turned down those disks of pizza dough before, this time I took the whole case and split with my neighbor.

In large bowl, take pudding mix and prepare according to package directions. Add margarine, eggs and salt. Mix well. Then add yeast mixture. Blend.
Gradually add flour; knead until smooth. Place in a greased bowl. Cover and let rise until doubled. Punch down dough and let rise again.
Roll out on floured board to 34x21" size.
Place on lightly greased cookie sheet 2" apart. Take hand and lightly press down on each roll. Cover and let rise until double again. Bake at 350°F for 15 to 20 minutes. Remove when they start to turn golden. DON'T OVER BAKE.
Frost warm rolls with Cream Cheese Frosting (see below).
Makes about 20 very large rolls.

baked, flipped and yummy! I sprayed pan with Pam (1st time) and there was nothing to scrap off pan, everything came off, easy as can be!

I use frozen pizza dough or bread dough. Use any plain recipe for yeast rolls.
I roll out dough as best I can, a rectangle at least as big as a cookie sheet.
Melt 1 stick butter ( I only use real butter)
spread cooled butter over dough to within 1/8 inch of edge of dough, use all of the butter.
1/3-1/2 cup brown sugar (splenda brown works great) sprinkle over butter.
1/3-1/2 cup white sugar (splenda works also) sprinkle over dough. Sprinkle cinnanom on sugar be generous.
1/3 cup of chopped pecans sprinkle over dough you can also add raisins/golden.
starting at wide edge roll up dough tightly as you can to start, roll until final edge on bottom.
spray pan lightly with pam
Cut off ends and set aside. Save end pieces to gobble up as reward or wait and add any gooey yummies on the counter.
Cut slices with very sharp knife I cut about 1 1/2 inch place on cookie sheet, touching sides as you go. (See pictures posted) above when all have been cut place the 2 end pieces cut side down on sheet and with knife scoop up any gooey stuff off counter and put on top of them.
I never do it exactly the same twice, but so long as they are rich and gooey I'm happy.
Let rise covered for 1 1/2 hour - 2 hours, preheat oven to 400 degrees very important to preheat. Oven must be hot when you put in rolls, they will rise some more. Place rolls on shelf in top third of oven, should bake nice and golden in 10-15 minutes. This obviously is a very forgiving recipe.
Have freezer paper, or aluminum foil laid on counter top. Take another sheet of aluminum foil and immediately upon taking rolls out of oven cover with aluminum foil and flip the whole pan laying on counter.
Enjoy, I can never wait for them to cool, always burn roof of my mouth with first bite, you would think I would learn.
Just for the record, the rolls in the picture I forgot the cinnamon...had to sprnikle on top of rolls, still came out good We sat around and laughed while licking our sticky fingers.

I have been wanting some of these ever since Joni posted this picture, but did not have any frozen pizza dough. What I did have was a can of Jumbo buttermilk biscuits. So, I rolled each one out into a square/rectangle and added the other ingredients, rolled them up, pinched together, then cut in half. When I put them on the foil I did press them down some. I baked them for about 10 minutes at 400 degrees but need to watch this temp. They weren't as pretty as Joni's but they did satisfy my craving. Sorry, no picture, we ate them too fast!!
