Meat Loaf Recipe... 1 1/2 pound ground beef, 1 egg, either dried minced onion or minced fresh onion to taste, I usally use approx 1/4 cup dried onions. garlic powder(1 tsp) or more to taste.
1/2 cup oatmeal right out of the box (replaces bread crumbs and is healthier)
1/4 cup steak sauce, 1/3 cup either catsup or pasta sauce(it changes with what's in my fridge)..hehe
Mix together (don't use your hands too much because the more you handle it with hands makes the meat tough...don't understand why but that's what I've been taught. I start with wooden spoon and finish with hands. Make into loaf and cook at 375 dgrees for 1 hour. I put a layer of catsup on top before baking. I put it on a rack when baking as well and fat falls below rack and makes it less fattening. Hope this helps. Sometimes you can doctor it with things you like too. You can add chopped peppers(DH doesn't like them). Hope this works for you. DH says my meatloaf never tastes the same way 2 times in a row because I don't measure anything. I approximated the ingredients as best as I could . Hope you like it.

This is exactly what my DH says everytime I make meatloaf, and this is almost exactly like my recipe. I always use my hands and my meatloaf is definitely not tough, so I think that might be an old wives (or old chefs) tale. I just love a good meatloaf.
Gee, Diana sounds just like my meatloaf except I use worchestershire sauce and a little dry mustard instead of the steak sauce, but that is about the same as worchestershire. Ginny

I'm making one of my fall/winter favorites today....beef stew in the slow cooker. I love winter cooking much better than summer cooking (except I do love to grill things in the summer).
Karla, I have been know to grill all year long . even with snow on the ground ,that is if I can get my backdoor open to my deck , it faced to the north and it sometimes freezes shut..LOL Barbara

Diana,this is very close to my meatloaf fixin's next time try a little or alot of Calvenders greek seansoning in you meatloaf , it really is very good ..I use it alot on meats and vegs cooked .Barbara

I use bread crumbs soaked in milk and have never had a dry hamburger or meatloaf since. I use all the seasonings mentioned above as well, not all at once, but I fling open the fridge and cupboards and start adding until it smells right. And I DON"T do what a friend does, puts the hamburger on the grill and when she flips them over she PRESSES all the juice out and when they are "done" they are dry as pucks. Uk!!
When my MIL made her meatloaf, back in the 70's, she put small cubes of potatos in it. I never could figure that out. She also put apple in her tuna salad. A GF put velvetta cheese cubes in her meatloaf.
Actually, the potatoes and the Velveeta cheese sound pretty good...I'll have to try that, maybe both of them together. I put apples in my chicken salad, but never in tuna salad. In tuna salad I use pickles, eggs and green onions.

I only do that on my husband's, he likes everything so well done it's like eating shoe leather. No wonder he's not a fan of meat, he ruins it. I never let him grill anything but his own, as I'm not fond of shoe leather. I prefer rare and juicy.
