&lt;p&gt;1 lb gr beef&lt;br /&gt;
1 green &amp;amp; 1 red pepper chopped&lt;br /&gt;
2 tsp oil&lt;br /&gt;
2 c cooked quick rice&lt;br /&gt;
1 16 oz stewed tomatoes chopped&lt;br /&gt;
1 24-26 oz mild salsa&lt;br /&gt;
grated cheese&lt;br /&gt;
Brown ground beef in oil. Add chopped vegs and cook until soft. Drain.
Add tomatoes and salsa. Simmer 5-10 min. Add rice and mix all well.
Cover and simmer on low 15 min. Serve with grated cheese on top. I made
a quick pan of corn bread to complete meal.

&lt;p&gt;2 cans (15 oz. Each) black beans, rinsed and drained&lt;br /&gt;
1 jar (8 oz.) salsa, divided&lt;br /&gt;
10 flour tortillas (8 inches)&lt;br /&gt;
2 cups (8 oz.) shredded cheddar or Colby-Monterey Jack cheese&lt;br /&gt;
sour cream&lt;/p&gt;
&lt;p&gt;In a bowl, mash the beans; add 1 cup salsa. Place five tortillas on
ungreased baking sheets; spread with bean mixture. Top with the
remaining tortillas; sprinkle with cheese.&lt;br /&gt;
Bake at 350 degrees for 15-18 minutes or until crisp and heated
through. Cut into wedges. Serve with sour cream and remaining salsa.
